  1. Place all the ingredients from Group I into the mixing bowl.
  2. Using a flat beater blend on slow speed for 1 minute to disperse powders.
  3. Stop the mixer and scrape down.
  4. Continue mixing for a further 3 minutes on medium speed.
  5. Prepare a muffin tray with muffin cups and scale 60g of the Queenie batter into each cup.
  6. Bake at 180ºC for 20-25 minutes.
  7. Remove from the oven and allow to cool.
  8. Cover each cupcake with 15g ganache and allow to set.
  9. Decorate as desired with Choc Mint Crumble, Peanut Nibs, Choc Vermicelli or Mini Bingos.
