- Place all the ingredients from Group I into the mixing bowl.
- Using a flat beater blend on slow speed for 1 minute to disperse powders.
- Stop the mixer and scrape down.
- Continue mixing for a further 3 minutes on medium speed.
- Prepare a muffin tray with muffin cups and scale 60g of the Queenie batter into each cup.
- Bake at 180ºC for 20-25 minutes.
- Remove from the oven and allow to cool.
- Cover each cupcake with 15g ganache and allow to set.
- Decorate as desired with Choc Mint Crumble, Peanut Nibs, Choc Vermicelli or Mini Bingos.
